The objective of the research is to explore Italian customers’ perceptions of fish and seafood fast-casual foodservice restaurants, so to identify expected food, environmental, and organizational attributes’ importance. The sample includes 600 fish and seafood customers interviewed face to face. Data elaboration included an exploratory factor analysis on fast-casual food and restaurant attributes, followed by chi-square and ANOVA to profile customers’ perception towards the level of importance of the factors. Hygiene, personnel, and sensorial attributes are the three most important factors for all groups of customers. Gender and age are the most differentiating socio-economic characteristics. This study is a pioneering research on a restaurant format expanding in European countries and validated an attribute assessment scale for fast-casual restaurants. Results suggest the following managerial implications useful to define investment strategies: guaranteeing high hygiene standards, investing on personnel quality, offering tasty and good food, and targeting strategies focused on customers’ lifestyle.  相似文献

本文旨在研究海水环境中刚性封闭箱体水产养殖系统的潜在设计工序。封闭箱体水产养殖技术通过限制并操控养殖鱼类与外部水环境相互作用以将环境影响最小化。系统的箱体单元通常紧密排布并锚泊到海底。研究关注的地理区域在加拿大不列颠哥伦比亚省乔治亚海峡。本文研究了含多个单元的箱体水产养殖系统的设计构造。设计程序包括检验以下内容:当地环境条件;多个箱体单元上受到的阻力;波浪荷载;无阻尼升沉运动;锚泊设备组件;刚性控制结构的材料应力。还讨论了操作以及其它设计要素。初步研究结果表明波浪力是至关重要的。  相似文献

The risks from consuming self‐caught fish are receiving international attention because of high levels of contaminants in some species. The ethnic, income, and educational differences in fishing and fish consumption patterns of 202 anglers fishing along the Clinch River arm of Watts Bar Reservoir adjacent to the US Department of Energy's Oak Ridge Reservation (ORR) or along Poplar Creek within ORR boundaries were analyzed to understand how to design a risk communication strategy. Because of elevated PCB concentrations in striped bass (Morone saxatilis), catfish (Ictalurus spp.), and sauger (Stizostedion canadense) due partly from contaminants released from the ORR in East Tennessee, the Clinch River arm of Watts Bar Reservoir is under a fish consumption advisory, while portions of Poplar Creek are under advisories because of mercury. Most studies find that a high proportion of anglers eat their catch, and people with lower incomes and less education generally eat more self‐caught fish than others fishing in the same region. Calculating fish consumption individually for each person indicated that a considerable number of people ate more fish from the study area than the amount used to calculate risks when developing fish consumption advisories, and people who ate fish more often usually ate larger portions. Unlike previous studies of fish consumption, this study indicated that a smaller proportion of anglers ate their fish, and those that ate the most were the high income anglers for this fishing population, rather than those with lower incomes. This suggests that risk communication strategies must include site‐specific information on the population at risk from fish consumption, and that targeting only low income, low education anglers will miss some people who are most at risk.  相似文献

The present paper reviews the literature on the risks and benefits of aquaculture. By bringing together sources from both natural sciences and social sciences, we provide a synthesis of perspectives on the relatively novel activity of modern aquaculture. This review consists of three parts: first, a background to aquaculture; second, an overview of the scientific risks and benefits; and third, an introduction to the related public perception issues. We establish five main risk‐related areas: human health, environment, organizational, fish welfare, and social issues and utilize these to highlight potential divergences in expert and lay perceptions. Drawing on findings from the risk perception literature, particularly those related to previous food‐related controversies, it is argued that aquaculture incorporates a range of issues, which have already been shown to be a catalyst for public concern. As such, we conclude that, in addition to natural science studies, aquaculture requires a social science approach in order to be able to anticipate and address future controversies in a timely and efficient manner. However, to date, only few articles address aquaculture from a social science perspective, and the present paper is offered as a step in this direction.  相似文献

This study's objective was to segment Belgian fish consumers based on their motives, perceived barriers, and their risk perception corresponding with fish consumption. Cross-sectional consumer data were collected in November 2004 through a self-administered questionnaire (n = 852). Cluster analysis distinguished between three consumer segments. Uncertain fish consumers indicate strong motives and a low risk perception, but experience some barriers to increase their fish consumption. Fish Lovers do not perceive any risk from eating fish and express strong motives and low barriers. Finally, Concerned fish consumers perceive few barriers, and they score relatively moderate on fish consumption motives, but express some doubts with respect to potential risks from eating fish. Profiling the clusters yields opportunities for targeted marketing strategies and product orientation.  相似文献

Aquaculture growth has led to worries about overfishing and reduction in wild‐caught food fish supply because of increased demand for fish meal. As such, the price ratio between fish meal and soybean meal has received much attention as an indicator of changing market conditions. In recent years, the price ratio between these two commodities has become more volatile. Several authors have suggested that the traditional relationship between fish meal and soybean meal has broken down and that this is evidence of increased demand pressure on fish meal. In this article, we investigate the hypothesis that there are two regimes for the relative price between fish meal and soybean meal. The empirical results support this hypothesis, with the low‐price regime representing the traditional stable relative price. The continued linkages between the fish meal and the soybean meal markets indicate that aquaculture is reducing its dependency on marine proteins in favour of vegetable proteins.  相似文献
